It is better to take the cabbage fresh: the salad will turn out much tastier from it compared to the old one. Chop (crush), cut out the yolk or grind it on a special grater. Transfer the cabbage to a bowl. Sprinkle with salt and knead lightly with your hand to release the juice at least slightly. Let it simmer for 10 minutes. During this time, the juice will be even more.
Now you need to heat the cabbage a little. This can be done in different ways. For example, the cabbage bowl is placed on top of a pot of boiling water, or in the microwave. The cabbage should be heated in such a way that you can dip your finger inside and feel the pleasant warmth freely. Pour vinegar into the cabbage and stir.
Peel the carrots and grate them on a large grater. Add the cabbage. Sprinkle with sugar and stir. Refrigerate for one or half an hour. Remove the cabbage from the salad bowl (you can lightly drain excess liquid). Add vegetable oil, and stir. If desired, you can also sprinkle with a little pepper.
