Ingredients
6 servingsPreparation
Soak the beans in cold water for a couple of hours in advance. Place the chambal beans in a saucepan, add the whole slice(s) of Rachian ham, bay leaves, pour over water and simmer together until completely softened.
While the beans and ham are cooking, finely chop the onion and sauté, add the crushed garlic, spices and pepper and simmer for 2 minutes so that the flavors and aromas open up well. After that, remove from the heat.
When the beans and ham are cooked, remove the ham, remove the skin/bone (if any), and finely chop the meat. Peel the hot beans directly into the pot, transfer them to an earthen pot (or small pots), add chopped ham, chopped herbs, sautéed onions with spices and put in the oven preheated to 200 degrees for 15 minutes. When serving, sprinkle chopped herbs on top.
