Wheat flour of the highest quality500 g
Milk 3.2%150 ml
Water120 ml
Dry yeast7 g
Chicken eggs2 pcs
Cream Butter 82.5%50 g
Sesame seeds3 tbsp
Salt1 tsp
Sugar2 tbsp

Preparation

1

Yeast activation and kneading • Dissolve sugar and yeast in warm water and milk. Let stand for 10 minutes until activated. • Put flour and salt in a large bowl. Pour in the yeast mass and add 1 beaten egg. • Begin to speak. As soon as the mass is combined, add the soft butter in portions. • Knead the dough for 10 minutes (or with a mixer for 5-7 minutes) until smooth and elastic is obtained. • Cover with a canvas and let stand in a warm place for 1 hour, until it has grown twice.

2

Cookie Formation • Divide the puffed dough into 8 equal parts. • Give each part a perfectly round shape so that the surface stretches and becomes smooth. • Line the baking sheet with parchment and arrange the teams at least 5 centimeters apart. • Press each team slightly from above with your hand to flatten it slightly (to take the shape of a burger).

3

Second puffing and sprinkling sesame • Cover the cookies with a light cloth and let them rest on a plate for another 30-40 minutes. They should be significantly puffed. • In a small bowl, beat 1 egg and 1 tablespoon of milk. • Brush this mixture very carefully over the surface of the cookies. • Immediately before wet, sprinkle generously with sesame seeds.

4

Baking Bake in a well-preheated oven at 190 degrees for 15-18 minutes. • The cookies should become shiny and golden-brown. • Once removed from the oven, you can add a little melted butter to keep the skin surprisingly soft. Cool on a wire mesh. Before assembling the burger, cut the bun in half and lightly fry the inside side in the pan in butter so that the sauce doesn't soak up and crumble.
