Ingredients
4 servingsPreparation
Preheat the oven to 160°C. For the fasting soup, peel the onion and chop it, preferably into thin half rings or quarter rings. Peel the garlic cloves.
To cook the onion soup, take a large, thick-bottomed saucepan, pour about 4 tbsp. olive oil into the pot, season with salt, and add the onion. Sprinkle with sugar and nutmeg, stirring. Place the pot over medium heat and fry until golden, stirring occasionally. This will take about 10 minutes.
Put whole garlic cloves on the onion, cover the pot with foil and put in the oven preheated to 160°C. Cook for 1 hour, during this time stir the onion twice.
Transfer the pot back to medium heat, pour 1-1.5 l of cold drinking water. Bring to a boil and simmer for 20 minutes. Season the fasting onion soup with salt and pepper (to taste).
