Preparation

1

Place the carefully peeled and well-washed whole turkey in a large saucepan, pour over water and cook to show. Foam at frequent intervals, and keep the fat on the surface to cook the onions. Remove the half-cooked turkey, season with salt, place on a baking tray and roast in the oven at 180 degrees until golden brown. Then cool and cut into desired sized pieces. In the process of roasting the turkey, remove excess fat from the broth, drain well and cool. Fry very finely chopped onions in turkey fat over low heat until completely tender and translucent (should not be browned!!). Grind the walnuts and garlic three times in a meat grinder. Knead well by hand to remove the oil and recover. Then mix all the spices with the walnuts: coriander, foreign spices, yellow flower, cloves, salt and pepper. Slowly mix the walnut mass in a saucepan with the warm broth and dissolve well. Add the stewed onion, turkey slices and put on low heat. Bring to a boil, stir continuously with a spoon and add vinegar 5-7 minutes after boiling, turn off the heat and leave to cool. When serving, pour your own walnut oil on top.
