Baked turkey with oranges and garlic Recipe
Ingredients
8 servingsPreparation
In a large saucepan, put salt, sugar and pour boiling water. Add cinnamon, coriander seeds and bay leaf, mix well so that the sugar melts. Then add cold water. Cut the onion into rings and put them in brine. Cut the carrots into thin rings and add them to the brine as well.
Wash the turkey and place it in brine for 1-2 days and overnight (put the pot in the refrigerator or take it out in the cold, on the balcony). Remove the turkey from the brine, drain the water and dry it with a paper towel. Wash the oranges. In a small saucepan, boil the water and place the oranges in it for two minutes, then remove and dip the clove grains in it. With a knife in half, cut the whole head of garlic on a plane.
Place the garlic and oranges inside the turkey, sew out the belly opening with toothpicks and fix. Place the softened butter in a small bowl, sprinkle with the black pepper and mix carefully. Preheat the oven to 220°C. Line the baking sheet with foil so that the bird can be rolled into it. Place the turkey on a baking sheet and brush generously with pepper butter.
Wrap the turkey in foil. Put it in the oven and bake for 40 minutes, then lower the temperature to 180°C and bake for another 3-4 hours (if the turkey weighs more than 6-7 kg, increase the time to 6 hours). After half the time has elapsed, take out the turkey, unwrap the foil, brush with the remaining pepper butter, wrap it again in foil and put it back in the oven. Take out the turkey, remove the foil, raise the oven temperature to 230°C and bake for another half hour to bake the turkey well. Serve deliciously.
